Containers for cheese-making

The fuscelle (forms for making cheese) are important items in the cheese-making process. They are flexible and resistant to high temperatures, made with various materials, such as reeds, using the warp and weft technique, and constructed on molds to obtain identical shapes. These cylindrical or truncated conical shaped containers have a circular base made of reed stems.

The sides vary according to their usage; those used for making ricotta flare outwards and have a large plaited rim. Fuscelle with straight sides and a fine mesh are used for cheeses of a firmer texture. Weaving progresses quickly: several reed stems are woven simultaneously into the warp, also made of reeds, in a continuous coil up to the rim. The size varies according to the product to be contained, for cheese, the diameter varies from 5 to 40 cm and the height from 10 to 22 cm.
